Sunday Gravy

Ingredients

  • 1.5-2 lbs Italian sausage (hot or 50/50 mix)

  • 2-2.5 lbs country style pork ribs

  • 1 lbs beef shank

  • 1-1.5lbs meatballs

  • 1 medium onion

  • 1 carrot

  • 6-8 garlic cloves

  • some fresh basil

  • 2 - 28oz cans whole peeled tomatoes or crushed

  • 1/2-1 Cup dry red

  • salt

  • black pepper

Process

  1. salt and brown other meats in olive oil

  2. Remove meats and some fat

  3. saute onion and carrot til slightly soften, add salt

  4. garlic in til fragrent

  5. wine in, simmer and reduce

  6. tomatoes in

  7. add salt and black pepper, should be a little under

  8. meat back in except meatballs

  9. into the oven at 300F, let stew low and slow (3-5 hours)

  10. cook meatballs, fry or broil, and add in to finish ~45 minutes

  11. fish meat out when done, keep warm

  12. finish sauce off with a knob of butter and hand torn basil
